Mmmm Mmmmm Good!

This weekend I made homemade chicken noodle soup. It was so easy to make and so delicious!! It makes enough to save some and it tastes just as good warmed up the next day. I am excited about this new discovery as the fall season sets in and the weather gets colder. Here is the recipe if you want to try it :)

Chicken Noodle Soup

6 ounces skinless, boneless chicken
1 tablespoon olive oil
1/2 tsp sea salt or kosher salt
1/2 tsp ground black pepper
2 quarts chicken broth
1 cup celery, diced
1 cup carrots, sliced or diced
4 green onions (thinly sliced)
2 cups egg noodles, wide variety
1/4 cup fresh cilantro or parsley (chopped)

-Preheat oven to 350 degrees
-Lay out chicken on baking sheet and coast with olive oil. Season with salt and pepper
-Cook in oven 30-40 minutes until cooked. Remove oven and allow to cool.
-Heat chicken stock. Simmer in uncovered stock pot before adding other ingredients
-Cut up chicken into medium size cubes
-Dice celery, slice or dice carrots and thinly slice green onions
-Add celery, carrots, green onions and noodles to broth or stock. When noodles are fully cooked (8-10 minutes), add chicken, meat and then parsley. Allow to cook for an additional 4 minutes or until meat is heated and serve hot.
